Ajoutez le beurre et faites chauffer sur feu vif en remuant de temps en temps. D\u00e8s que le m\u00e9lange se met \u00e0 bouillir, retirez la casserole du feu. Ajouter toute la farine d&#8217;un seul coup et m\u00e9langez vigoureusement avec une cuill\u00e8re en bois jusqu&#8217;\u00e0 consistence bien homog\u00e8ne : la pr\u00e9paration doit se d\u00e9coller des parois de la casserole. Remettez celle ci sur le feu doux et continuez a travailler la p\u00e2te pendant 1 minute pour la dess\u00e9cher.<\/div><\/li><li id=\"wprm-recipe-951-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Versez rapidement le contenu de la casserole dans le bol d&#39;un mixer \u00e9lectrique \u00e9quip\u00e9 d&#39;une spatule souple. Incorporez peu \u00e0 peu les oeufs et 40g de fromage rap\u00e9 en actionnant l&#39;appareil sur vitesse moyenne pour incorporer le maximum d&#39;air \u00e0 la pr\u00e9paration. Celle ci doit avoir la consistance d&#39;une mayonnaise tr\u00e8s \u00e9paisse.<\/span><\/div><\/li><li id=\"wprm-recipe-951-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Versez la p\u00e2te dans une poche \u00e0 douille \u00e9quip\u00e9e d&#8217;une douille unie de 1 cm de diam\u00e8tre. Selon la taille de la poche, vous aurez \u00e0 pr\u00e9parer les choux en une ou deux fois. Poussez la p\u00e2te en petits tas de 5 cm, en les espa\u00e7ant de 5 cm sur la t\u00f4le. Si vous n&#8217;avez pas de poche \u00e0 douille, servez-vous simplement d&#8217;une cuill\u00e8re \u00e0 caf\u00e9.<\/div><\/li><li id=\"wprm-recipe-951-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Poudrez les choux avec le reste de fromage r\u00e2p\u00e9. Enfournez \u00e0 mi-hauteur et faites cuire entre 20 et 25 minutes jusqu&#8217;\u00e0 ce qu&#8217;ils soient bien dor\u00e9s. \u00c9vitez d&#8217;ouvrir la porte du four pendant la cuisson des choux, sinon l&#8217;humidit\u00e9 qui y r\u00e8gne s&#8217;\u00e9chappera et les choux seront secs.<\/div><\/li><li id=\"wprm-recipe-951-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Lorsque les choux sont dor\u00e9s, v\u00e9rifiez s&#8217;ils sont cuits. Sortez-en un du four: il doit \u00eatre souple et moelleux \u00e0 coeur. D\u00e9collez les choux de la t\u00f4le et mettez les sur une grille.
