D\u00e9rouler 1 p\u00e2te feuillet\u00e9e sur la plaque du four couverte de papier et la piquer avec une fourchette. Poser le filet de b\u0153uf dessus puis recouvrir de la deuxi\u00e8me p\u00e2te. Souder les 2 p\u00e2tes avec un peu d\u2019eau.<\/div><\/li><li id=\"wprm-recipe-1395-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Battre le jaune d\u2019\u0153uf avec 1  cuiller\u00e9e  d\u2019eau et en badigeonner le feuillet\u00e9.<\/div><\/li><li id=\"wprm-recipe-1395-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Parsemer de quelques noisettes de beurre truff\u00e9. Enfourner 20 minutes.<\/div><\/li><li id=\"wprm-recipe-1395-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Sortir le filet en cro\u00fbte du four et le laisser reposer quelques minutes. Pendant ce temps-l\u00e0, porter le jus de truffe \u00e0 \u00e9bullition avec 5 cl d\u2019eau et le beurre truff\u00e9 restant dans une petite casserole puis fouetter pour bien m\u00e9langer.<\/div><\/li><li id=\"wprm-recipe-1395-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Couper le feuillet\u00e9 en tranches avec un couteau-scie.<\/div><\/li><li id=\"wprm-recipe-1395-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Repartir les tranches de filet dans 6 assiettes. Arroser la viande du jus de truffe chaud. Saupoudrer de sel de Gu\u00e9rande. Servir aussit\u00f4t.<\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\"> &#8211; Au lieu de mixer la truffe, on peut la couper en toutes petites lamelles et morceaux \u00e0 m\u00e9langer directement  avec le beurre ramolli.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">&#8211; On peut remplacer le jus de truffe si on n\u2019en a pas par de l.eau dans laquelle on a lis des petits morceaux \u00e0 mariner pendant quelques temps.
