Peser le sucre glace, et \u00e9ventuellement le cacao en poudre. Tout tamiser ensemble, r\u00e9server. On peut \u00e9viter le tamisage en passant rapidement au robot coupe ou au magimix le sucre glace et la poudre d\u2019amandes pour bien les m\u00e9langer.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Meringue italienne: (Lire avant de faire cette \u00e9tape, pcq il y a un peu de synchronisation \u00e0 g\u00e9rer)<\/div><\/li><li id=\"wprm-recipe-1181-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mettre la moiti\u00e9 des blancs d&#8217;oeufs dans un grand bol.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Faire chauffer le sucre en poudre et l&#8217;eau dans une casserole pour faire un sirop, et surveiller la temp\u00e9rature \u00e0 l&#8217;aide de la thermo-sonde.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Quand le sirop est \u00e0 90\u00b0C, commencer \u00e0 monter progressivement les blancs avec \u00e9ventuellement une pinc\u00e9e de sel et 2 gouttes de jus de citron.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Quand le sirop atteint 117\u00b0C, les blancs devraient \u00eatre bien fermes. Verser le sirop doucement dans les blancs d&#8217;oeufs, en le faisant couler sur les bords de la paroi sans \u00e9clabousser (Ne pas le verser en plein milieu!) tout en mixant. Le m\u00e9lange obtenu doit \u00eatre bien brilliant, bien ferme et faire un<\/div><\/li><li id=\"wprm-recipe-1181-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Ajouter le colorant en poudre ou en p\u00e2te dans la meringue chaude, quand il est tout \u00e0 fait incorpor\u00e9 ajouter les 55g de blancs crus non mont\u00e9s. Laisser tourner \u00e0 peine 15 secondes.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Macaronage: Remplacer le fouet par la feuille-le fouet plat- ajouter les poudres en une seule fois et macaronner une bonne minute. Terminer \u00e9ventuellement le macaronnage \u00e0 la maryse en travaillant de bas en haut en partant du milieu pour avoir un appareil lisse et brillant. Ce m\u00e9lange doit \u00eatre souple, il doit faire le ruban\u2026.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Pochage: Mettre dans la poche tout l\u2019appareil et dresser de petits tas r\u00e9guliers en quinconce. Il faut placer la poche \u00e0 la verticale \u00e0 2mm de la plaque et en sortant, la pate fera un petit disque. Faire des disques de 3cm, ils vont un peu s&#8217;\u00e9taler avant la cuisson comme le m\u00e9lange est assez liquide.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Taper l\u00e9g\u00e8rement si n\u00e9cessaire les plaques par en dessous pour lisser.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Cro\u00fbtage (Facultatif): Laisser reposer les macarons \u00e0 l&#8217;air libre pendant 1h, pour que se forme une petite pellicule qui permet d&#8217;\u00e9viter les fendillements et d&#8217;avoir une jolie collerette. Mais les \u00e9coles diff\u00e8rent, certains p\u00e2tissiers disent que \u00e7a ne sert \u00e0 rien.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Enfourner de suite sans attendre pour 13 \u00e0 15min minutes. Ouvrir 2 ou 3 fois le four en cours de cuisson pour \u00e9liminer l\u2019humidit\u00e9 r\u00e9siduelle qui peut parfois faire \u00e9clater le macaron.<\/div><\/li><li id=\"wprm-recipe-1181-step-0-14\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">A la sortie du four laisser refroidir quelques minutes avant de d\u00e9coller. Si vous voulez mettre beaucoup de garniture, vous pouvez enfoncer le dessous des coques d\u00e9licatement avec les doigts (facultatif)<\/div><\/li><li id=\"wprm-recipe-1181-step-0-15\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Une fois les coques d\u00e9coll\u00e9es et refroidies, on peut les garnir. Conserver au moins une nuit au r\u00e9frig\u00e9rateur (et jusqu&#8217;\u00e0 une semaine) pour que le go\u00fbt de la garniture infuse les coques.<\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\"> \u2013 Les macarons, \u00e7a ne s&#8217;improvise pas pour le soir m\u00eame!<br \/>\n\u2013 Privil\u00e9gier les colorants en poudre ou en get, les colorants liquides changeant la texture de l&#8217;appareil.<br \/>\n\u2013 Connaissance du four : tester plus ou moins chaud, plus ou moins de temps de cuisson, plus ou moins de plaques simultan\u00e9es\u2026.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">Quelques causes possible de ratage:<br \/>\n\u2013 Si la meringue italienne n\u2019est pas ferme, les macarons seront creux en dessous.<br \/>\n\u2013 Macaronage: Si vous ne macaronnez pas assez, vous aurez une petite pointe sur le sommet du macaron au dressage. Trop d\u2019air incorpor\u00e9 pendant le macaronnage \u2013> risque de fendillement.<br \/>\n\u2013 Dressage \u00e0 la poche: maladresse-> d\u00e9faut de collerette, fendillement.<br \/>\n\u2013 Cro\u00fbtage: pas n\u00e9cessaire a priori. Mais \u00e7a donne parfois de meilleurs r\u00e9sultats, pas de fendillements par exemple.<br \/>\n\u2013 Humidit\u00e9: un surplus d\u2019humidit\u00e9 peut parfois faire \u00e9clater le macaron. Pour r\u00e9soudre le probl\u00e8me: ouvrir 2 ou 3 fois le four en cours de cuisson pour \u00e9liminer l\u2019humidit\u00e9 r\u00e9siduelle. \u00c9ventuellement, modifier tr\u00e8s l\u00e9g\u00e8rement les proportions pour avoir un peu moins de blancs d\u2019oeufs, qui apportent de l\u2019humidit\u00e9.
