Dans une sauteuse, faites fondre 20g de beurre, faites-y revenir l&#8217;\u00e9chalote hach\u00e9e sans coloration. Ajoutez les champignons, salez, poivrez et laissez-les cuire jusqu\u2019\u00e0 \u00e9vaporation de l\u2019eau: Il faut que la duxelle soit un peu s\u00e8che. Ajoutez alors le jambon de Paris hach\u00e9.<\/div><\/li><li id=\"wprm-recipe-115-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Etalez cette duxelle sur le filet de boeuf et entourez-le avec les tranches de jambon de Parme.<\/div><\/li><li id=\"wprm-recipe-115-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Sur le plan de travail farin\u00e9, \u00e9talez la p\u00e2te feuillet\u00e9e en forme de rectangle. Posez la p\u00e2te feuillet\u00e9e dans le plat de cuisson. Disposez dessus le r\u00f4ti + duxelle. Entourer le r\u00f4ti de la p\u00e2te feuillet\u00e9e en disposant une bande sur le dessus. Passez l\u2019oeuf battu sur la p\u00e2te feuillet\u00e9e. Dessinez des croisillons sur la bande de p\u00e2te pos\u00e9e sur le dessus. Enfournez au four pr\u00e9alablement chauff\u00e9 (th.8 240\u00b0C) et faites cuire environ 30 min.<\/div><\/li><li id=\"wprm-recipe-115-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Faites revenir \u00e0 la place du filet les parures de boeuf. Ajoutez le bouquet garni, la tomate, le concentr\u00e9 de tomates et laissez cuire doucement pendant 1h30min. Passez ensuite au chinois et faites r\u00e9duire ce fond pour en obtenir 1\/4L; liez celui-ci avec la f\u00e9cule de pomme de terre, pr\u00e9alablement d\u00e9lay\u00e9e dans un peu d\u2019eau.
