Mettre le gingembre, l&#8217;ail, la coriandre et le jus de citron vert dans un bol. M\u00e9langer et laisser infuser 10 minutes. Filtrer la mixture \u00e0 travers un chinois, et ajouter la pate de chilli and 1\/2 cuill\u00e8re \u00e0 caf\u00e9 de sel. Go\u00fbter pour verifier l&#8217;\u00e9quilibre des saveurs et ajouter plus de sel, chilli ou jus de citron si n\u00e9cessaire, Mettre de c\u00f4t\u00e9.<\/div><\/li><li id=\"wprm-recipe-1066-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Pendant ce temps, faire tremper l&#8217;oignon \u00e9minc\u00e9 dans de l&#8217;eau glac\u00e9e pendant 5 minutes, puis bien \u00e9goutter et le poser sur du papier essuie-tout pour le faire s\u00e9cher compl\u00e8tement.<\/div><\/li><li id=\"wprm-recipe-1066-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Faire bouillir une petite casserole d&#8217;eau. Saler puis ajouter les cubes de patate douce. Baisser le feu et laisser fr\u00e9mir jusqu&#8217;\u00e0 ce qu&#8217;elle soit tendre (5-7 minutes). Egoutter et metre de c\u00f4t\u00e9.<\/div><\/li><li id=\"wprm-recipe-1066-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mettre les cubes de bar dans un bol avec la leche de tigre pendant 1 minute seulement, puis ajouter l&#8217;oignon, la coriander hach\u00e9e, l&#8217;avocat, les physalis, and la patate douce cuite. M\u00e9langer tous les ingredients d\u00e9licatement (il ne faut pas \u00e9craser l&#8217;avocat ou la patate douce), puis s\u00e9parer dans 4 bols. Le cancha est consomm\u00e9 dans les regions andines \u00e0 l&#8217;ap\u00e9ro comme des cacahu\u00e8tes. On le trouve aussi dans certains cevices ou comme accompagnement de plats marines.
