Fouetter vivement au fouet \u00e0 main ou au batteur \u00e9lectrique, pour \u00e9mulsionner la pate en y incorporant de l&#8217;air et pour la rendre plus l\u00e9g\u00e8re: la p\u00e2te doit doubler de volume. Le verser sur le chocolat, et remuer vivement pour le faire fondre et obtenir un m\u00e9lange lisse.
